Technical features
- Appellation:Coste Della Sesia Nebbiolo DOC
- Grape varieties:Nebbiolo 100%
- Characteristics of the vineyards:in the Cascina Chignalungo estate (Municipality of Lessona), facing south-east to south-west, 290 metres above sea level, average 5000 vines per hectare.
- Soil:fluvioglacial gravelly-sandy coarse and heterometric fluvioglacial soils, deeply altered and partly loose, surmounted by loessic, silty-clayey summit levels. Acidic soils (pH 4.5-5.4) with an orange, yellow and dark brown colour. They are rich in minerals such as manganese and iron, which strongly influence the taste characteristics of the wine.
- Harvest:careful and strict manual harvesting of the grapes in the vineyard, in small 7-9 kg crates, followed by further selection in the cellar.
- Vinification:after careful sorting on a vibrating table, destemming and soft crushing takes place, with the berries falling into temperature-controlled steel tanks. Spontaneous fermentation begins, and maceration on the skins for 7-10 days at a maximum controlled temperature of under 28° celsius, repeating punching down and pumping over about twice a day.
- Aging:the wine is decanted and matured in temperature-controlled steel tanks for at least 12 months. After bottling, the right amount of time is allowed for final ageing.
- Alcohol content:13% vol
- Serving temperature:18-20° C uncork the bottle 1-2 hours before use.
